Ackee with baby spinach
Ingredients
Buy 1 can of Ackee here
100 g baby spinach
2 spring onions (sliced)
2 garlic cloves (chopped)
½ red pepper (chopped)
½ green pepper (chopped)
1 tomato (halved, sliced)
1 Scotch Bonnet Chili, chopped or powder/ puree etc. (optional) buy here
Oil for frying
Salt, pepper, paprika powder, thyme, allspice
preparation
Sauté the onions in a little oil, add the peppers and scotch bonnet and fry. Add the garlic and then the baby spinach. Carefully drain the ackee from the tin. Add it to the pan at the very end, stir carefully and heat. Season to taste with the spices.
Serve with rice or Jamaican fried dumplings
